Here’s a great appetizer to make when you have no time to do something fancy, but want it to look fancy. I also use this for a light lunch for myself and my husband. He’s sometimes a big eater, so I’ll often add a few ham roll-ups on his plate.



Serves 2
1 ripe avocado
12 mini balls of fresh mozzarella
4-6 cherry tomatoes
2 sprigs fresh rosemary
Full-fat Italian Dressing or Vinigrette
4 short wood skewers or very long decorative toothpicks


Split the avocado in half and remove the seed.
Cut the cherry tomtoes in half.
Arrange on the plate with the sprig of rosemary and drizzle your favorite dressing on the salad.
