One dictionary definition of cacciatore is “prepared in a spicy tomato sauce with mushrooms and herbs.”  But after looking up recipes I have come to think of it as :catch-all”.  They were all different and none were even similar to my favorite at a restaurant I love to go to in a town where I used to live.  So here is my best guess on how they make it. (except I added the capers giving it 2 brightness elements- I am a big caper fan)

INGREDIENTS

Serves 4

4  – 3 or 4 oz of chicken breast

1 cup Cacciatore sauce (Purchase or make it:

Tomato puree, diced tomatoes, Green bell pepper,

White wine, salt, olive oil, garlic, basil, thyme, oregano black pepper,

add a little sweetner if desired)

¾ cup sliced green olives

2 tablespoons capers

¾ cup sliced mushrooms

½ cup chopped onions

2 cloves of garlic finely chopped

1 tbs Italian seasoning

Parmesan to taste

Directions

Saute onions and garlic

Add chicken

Add sauce, olives, capers, mushrooms and seasoning

Simmer 20 minutes or until chicken is thoroughly cooked

Sprinkle with Parmesan or put on table and allow others to do their own
