A lovely variety of color, texture and flavor, you will find this salad dresses up any meal.


2 cups riced cauliflower

2 tablespoons olive oil

1 medium onion, chopped

1 each red, green, yellow or other colored peppers,sliced

Oil and lemon juice dressing

¼ cup chopped cilantro

1 cup pecans


Steam the riced cauliflower to soft but still a little firm and let cool

In a saute pan heat oil and saute onions and peppers until crisp/tender

Add the cooled cauliflower

Toss  with oil and lemon juice dressing.

Add cilantro and pecans as you toss

Serve at room temperature

Makes 4 generous servings

Add meat to make this a main dish
