Sweet potatoes are NOT considered Keto friendly. (But the butter, pecans and pickle juice are) However, it is a taste I have missed on Keto.  And Thanksgiving is next week. And if you can limit yourself to just one of these lovely treats made from a one inch slice of sweet potato it will be actually less than 7 grams of carbs and your non Keto family will love them.  I find one to be both delicious and satisfying.  I do not recommend it if you are early into Keto or if you are struggling.  But if you are doing fine or at your goal it will add to your Thanksgiving enjoyment, without taking you too far off track.

INGREDIENTS

2 Long, narrow sweet potatoes

2 Tbs Lakanto Golden Monkfruit Sweetener

2 Tbs pickle juice

1 tsp cinnamon

Topping

1/4 cup Lakanto Golden Monkfruit Sweetener

1/4 cup chopped pecans

2 Tbs melted butter

1/4 tsp cinnamon

 

 

Directions

Preheat oven 350 degrees (I use a toaster oven and set it at 375)

Boil the sweet potatoes until fork tender

Cut sweet potatoes into 1 inch slices and place them on parchment paper or a greased baking sheet.

Slide the peel off the slices and set end pieces aside

Spoon out the center of each slice being careful not to go through the bottom

In a small bowl mash the scooped out portions and the end pieces together with the Lakanto gold, pickle juice and cinnamon.

Stuff the mash back into the slices

Mix the topping ingredients together

Spoon the topping over each slice

Bake for 30 minutes or until the topping is bubbling

Remove from oven and serve

Makes about 8 or 10 servings

This is the sweet version.  I have always preferred the taste of just butter and salt on sweet potatoes rather than sweet.  You can cut the sweetener anywhere from 1/2 to 0 depending on your taste
