This is a go-to favorite! So quick and easy and so delicious. The only problem is it’s hard to stop eating.
INGREDIENTS
1/2 of a small head of cabbage
1/2 of a medium onion
One cup of bacon pieces or 6 strips of bacon
1/2 of a 12 oz bag of medium cooked shrimp
1/4 cup of crumbled Feta cheese
Salt and pepper to taste
3 or 4 Tbs bacon grease
Directions
If using frozen shrimp place in bowl under a small stream of running water to thaw
Chop cabbage (not too fine) I use a spin chopper and it is easy to overdo
Chop onions
If using bacon strips Chop the cooked bacon into small pieces.
(I prefer the pre-cooked bacon pieces for this recipe)
Heat bacon grease in a large skillet
Add cabbage and onions to skillet
Add salt and pepper
After a few minutes add the bacon
Cook on medium to medium high heat until cabbage is tender but still a little crisp stirring occasionally
Add feta and shrimp part way through. (You can choose to remove tails or serve with tails on)
Makes 4 nice sized servings.
