INGREDIENTS
3 Boneless Chicken Breasts or Thighs
1 1/2 Cups Low Sugar Marinara Sauce
½ Onion Chopped or Rings
2 Gloves Garlic Chopped
1 ½ Tbs Italian Seasoning
3/4 teaspoon Salt
About 3 sprigs of
¼ Teaspoon pepper
½ Cup Grated Parmesan
3 Slices Mozzarella
3 Slices Provolone
3 Teaspoons Olive Oil
About 3 sprigs of Steamed Broccoli
Directions
In small skillet sauté onions in one Tbs olive oil until they begin to caramelize
In the last minute add chopped garlic
In large skillet brown chicken in 2 tbs of olive oil
Sprinkle spices on each side of chicken
Add the onions, garlic and broccoli
Add the marinara sauce (if you need more liquid you can add a little chicken broth)
Cover and cook chicken with lid on medium low for about 12 minutes on each side
Add parmesan on top of each piece
Add Slice of Mozzerella on each piece
Add Slice of Provalone on each piece
Allow to simmer for another few minutes or until cheese is melty.
