I love appetizers! I’ll take a good app over even a great dinner any day.

Unfortunately, most appetizers are loaded with carbs. Not this one.

If you like clams, or seafood in general, you’ll love this recipe.  If you’re not too sure about clams, give them a try.  The creamy blend of herbs and spice changes everything.

INGREDIENTS:

1 regular-sizedl can clams (think green bean can size)

1 cup sour cream

1/4 tsp. salt

1/4 tsp. pepper

1/4 tsp. powdered garlic

1/2 tsp. dried dill

2 tbsp. finely chopped celery

1 tbsp. finely chopped onion

ground cayenne pepper or Cajun seasoning to taste (Optional)

raw vegetables for dipping.  Consider celery, radishes, green, red or yellow bell peppers, carrots (limited quantities), jerusalum

artichokes, asparagus, broccoli, cauliflower, even raw green beans.  I add a little tomato, but limit it.

Directions:

Open and drain the clams well.  Put them in a mixing bowl.

Add 1/2 cup of sour cream, the chopped celery and onions, and all of the herbs and spices except the paprika, adjusting the amounts to your tastes.

Add the rest of the sour cream a little at a time, until you like the consistency.

Put a large lettuce leaf on a pretty plate, spoon the dip onto the leaf, arrange your sliced dipping veggies around it, and gobble it down!
