For a refreshingly different summer salad give this one a try.  This salad lasts for several days and tastes better as it ages.

INGREDIENTS

1 small head of cauliflower or 3/4 of a large head

3/4 cup sliced pickles

2/3 cup cheddar cheese

3 Tbs finely diced white onions

2 Tbs fresh dill

1/2 cup pickle juice

Dressing

2/3 cup Keto approved Mayo

1/3 cup sour cream

1/8 tsp cayenne pepper

4 Tbs pickle juice

1/2 tsp salt

1/8 tsp black pepper

 

 

Directions

Steam cauliflower to just done. Run under cold water to stop cooking

Squeeze cauliflower in cheesecloth to remove excess water

Toss cauliflower with about 1/2 cup pickle juice and set aside for about 5 minutes.

Drain well and discard pickle juice

Combine all dressing ingredients and mix well

Toss all ingredients in a large bowl.  Refrigerate at least 1 hour before serving

For flavor variation you can add bacon pieces
