The weather is still cool enough to want to enjoy a good cup of soup. So here’s my Keto friendly design on a classic favorite. Just trade in Cauliflower rice instead of regular rice! Make this recipe and l’m sure it’s to impress!

INGREDIENTS

MEATBALS

  • 1 lb ground pork
  • 1/2 cup crushed pork rinds
  • 1/2 cup grated Parmesan cheese
  • 1 tbp Italian seasoning
  • 1 large egg
  • salt and pepper to taste

SOUP

  • 2 tbsp avocado oil
  • 1/2 cup chopped onion
  • 4 celery sticks
  • 2 cloves minced garlic
  • 1 tsp dried oregano
  • 6 cups chicken broth
  • 2 cups riced cauliflower
  • 1.5 cups leaves of spinach
  • salt and pepper to taste
  • Parmesan for topping

Directions

MEATBALLS:

  1. In a large bowl, mix together all ingredients.
  2. Form into 1/2 inch meatballs and place on a waxed paper-lined tray.
  3. Refrigerate until ready to add to the soup.

SOUP:

  1. In a large pot, heat the oil over medium heat until shimmering. Add the onion, celery, and sauté until vegetables are tender
  2. Add garlic, salt and pepper to taste and saute for an extra minute or two
  3. Stir in the chicken broth and oregano.
  4. Once it is boiling, bring down the temperature and simmer 10 minutes.
  5. Add the cauliflower rice and the meatballs and cook until the meatballs are cooked through (you’ll know they are cooked through when they start to float to the top)
  6. Add the spinach leaves and cook until wilted, 2 minutes more.
  7. Season to taste
