Just got back from our own personal Shark Week!  Swimming with these darlings is incredible.  Also including a little simple sauce recipe…. Watch for more sauce recipes to make every Keto dish taste better!

 

INGREDIENTS:

1 pound tomatillos (they look like small green tomatoes in husks, if you have Save-a-Lot in your area, they almost always have them.

1 large white or yellow onion

1-2 ripe limes (you know they are ripe if they can be squeezed a little and/or are green with a little yellow)

1 bunch cilantro, finely chopped

1-3 cloves garlic, chopped

Salt to taste

OPTIONAL:  1-3 fresh jalapenos

Directions:

Chop all the tomatillos, onion and cilantro, and, if you want spicy, the jalapenos.

Squeeze the lime juice into the veggies.  Make sure there is enough salt.

Let it sit as long as possible, to marry the flavors, and serve.

Or, if you like smooth sauces, blenderize to the desired consistency.

Especially good with pork and chicken….

You can use it as a raw sauce, or pour it over the pork or chicken before cooking, and let it cook with the meat.
