I usually think of spaghetti squash as a vehicle for spaghetti sauce. However, it’s actually delicious as a side dish all on its own. And, it’s quick and easy, especially with microwaves.

INGREDIENTS

1 spaghetti squash
4 tablespoons butter (for 4 servings)
½ cup grated parmesan cheese
Salt and pepper to taste

Optional;
Garlic Powder

 

Directions

Cut the squash into 4-6 pieces, depending on the size of the squash. Scrape off all the seeds and strings from the center.
Put one section for each person in the microwave. Put any extra pieces in a plastic bag and refrigerate for later.
Cook for two minutes at a time until the squash is soft and separates into spaghetti-like strings.
Using a fork, remove the flesh from the rind and pile it into a serving bowl. Toss with butter, salt and pepper (also garlic if you choose to add it).
If the butter doesn’t melt completely, microwave for another minute or two.
Garnish with the parmesan cheese.
